Diring the cruise last week and after the radio interview I have got a huge number of readers/listeners who ask if I really only eat once a day. And, yes. When I “control” my day I only eat one time a day. I sometimes go on social lunches but if I do not “have to” I only eat my meal between 16:00 and 20:00. IF I do eat lunch the dinner is a little less but that is not always the case. At restaurants it’s quite easy to dodge the carbs but it is harder to get the fat up. So my lunches are often quite low on energy.
Speaking of dinner…. Tonight I made a simple sauce hollandaise.
- 125g unsalted butter
- 3 small egg yolks
- 1 tablespoon of lemon juice
- 1 teaspoon of salt and some white pepper
Just beat the yolks, lemon and spices in a bowl. Heat slowly on a pot of boiling water. When the eggs are “fluffy” add melted butter really slow while beating. When all of the butter is in the sauce you are ready.
To the sauce I steamed asparagus and fried salmon.
