Strange day

Today I was once again lured out for lunch with my colleagues. The standard buffet place was chosen and I hade a weird mix of food with a little to many grams of carbs…

On the plates I had minced meat, chicken, cucumber, cheese, reindeer stew, olives and more cheese… The chicken is always a bit sweet and the stew was most probably thickened with flour.

When I got home in the evening I was not very hungry so I only made a nice “chocolate balls”:

  • 100g butter
  • 150g Coconut flakes
  • 1 tablespoon of cacao powder

Just mix everything but make sure the butter is really soft. I did not att any sweetener and it got a little bitter but really nice to a strong nespresso. I ate half of the make and will eat the rest tomorrow I guess…

So today I had only lunch and no real dinner…

    Earlier in the week, you ate fried cauliflower and broccoli rosti. Could you provide a recipe for that and carb count, please.

      Yes sorry, I planned on publishing it but I forgot…

      300g stalks from broccoli and cauliflower
      1 carot
      1 onion
      4 cm leek
      5 eggs
      2 dl cottage cheese
      2 dl grated cheese

      Grate the vegetables. Half of it on a rough grater and half on a finer (to get a better texture). Mix in a bowl with eggs, cottage cheese and cheese.

      Fry in a mix of butter and oil. If you are serving witch bacon you can first fry the bacon and use the grease to fry the “röstis”.
