Mayo with olives

Today I had a lot of fried chicken. I made a mayo with chopped olives as side. I used 125g of mayo and 180g of olives. I seasoned with a little curry powder and black pepper.

    Why mayo or store bought sour cream?
    Why not cream 180 ml and 60 ml fresh whole milk a d 15 ml vinegar?
    Mix leave on counter one or two days then refrigerate for best cream fresh?
    Less carbs less junk?

      Well, home made mayo is pretty much carb free. I have not tried making my own sour cream. Might give it a go sometimes.
